  1. Finely chop the herbs and mix them with the butter, the thick crème fraîche, lemon juice and the finely grated garlic clove. Season to taste with salt and pepper.
  2. Sauté the lardons in a pan until crispy, then drain on kitchen roll.
  3. Remove the crust from the bread and cut into cubes. Place the diced bread in the same pan as the lardons and sauté for about 2 minutes.
  4. Cut the iceberg lettuce into eight pieces and place two pieces on each plate; scatter the lardons and croutons on top and drizzle with the herb sauce.
