  1. Heat the oil in a large stew pot. Add the onions and celery stalk, sauté over a medium heat for about 10 minutes until soft. Add the celery cubes, apple wedges and thyme sprigs and simmer for 2-3 minutes. Then pour in the stock, add salt and pepper and simmer over low heat for 30 minutes until the celery is tender.
  2. Take off the heat, remove the sprigs of thyme and blend everything until you obtain a fine purée. Add half of the light single cream and mix well.
  3. When serving, pour the soup into the serving bowls, add a drizzle of cream and garnish with a few celery leaves and toasted hazelnuts.
