- Heat the oil in a large stew pot. Add the onions and celery stalk, sauté over a medium heat for about 10 minutes until soft. Add the celery cubes, apple wedges and thyme sprigs and simmer for 2-3 minutes. Then pour in the stock, add salt and pepper and simmer over low heat for 30 minutes until the celery is tender.
- Take off the heat, remove the sprigs of thyme and blend everything until you obtain a fine purée. Add half of the light single cream and mix well.
- When serving, pour the soup into the serving bowls, add a drizzle of cream and garnish with a few celery leaves and toasted hazelnuts.
