Chocolate-chip Muffins

  1. Prepare the muffin tins with suitable paper cases.
  2. Wash and peel the pears. Remove the cores and cut it into cubes.
  3. In a bowl, mix the flour with the cornflour, baking powder and sugar.
  4. In a second bowl, mix the fromage frais, eggs, butter and maple syrup.
  5. Add the flour mixture to the fromage frais mixture and mix until smooth. Add the pear pieces and the chocolate chips and mix one last time.
  6. Preheat the oven to 180°C.
  7. Fill the muffin cases up to 2/3 and put them in the oven for 30 minutes.
  8. Remove from the oven, allow to cool and sprinkle with icing sugar before serving.

Tips: 

Out of season, 230 g of drained pears in syrup can be used instead.
Vary the recipe by using 230g of apples and 100g of sultanas.
