Mini quark Muffins
with smoked salmon

- In a bowl, beat the eggs. Add the fromage frais and mix. Pour in the flour and baking powder little by little, add salt and pepper and mix well.
- Preheat the oven to 180°C.
- Cut the salmon into small pieces and chop the chives finely. Fold them into the dough.
- Pour the dough into small, greased cake or muffin moulds and bake for 30-40 minutes.
- Just before serving, decorate with 2 sprigs of chives.
